Lime is used to alter the PH of soil, offsetting acidity. Having "sweeter soils" (more basic PH) can help many types of plants including fruit trees and lawns intake nutrients.
Soil testing is encouraged to measure your soil's current PH. Much of Vermont has loamy soil that is a bit more on the acidic side of the spectrum.
