Helianthus tuberosus. Also known as Sunchokes, Jerusalem Artichokes are an easy-to-grow perennial sunflower native to North America. The flower has chocolate scented yellow blossoms in the fall and delicious edible tubers, lots of them. Tubers can be used raw in salads, cooked like a potato or turned into a dip.  Harvest in the fall, they're a bit sweeter after a frost.

Plant them 2-4" deep in a contained area, as they like to spread. The flower stalks grow to about 6 ft tall.

Gold finches and other birds love to eat the seedheads. Attracts butterflies and other pollinators.
